The fruit, handpicked in early Feb, is treated with real care: fermented on fine solids in a mix of stainless, concrete, and neutral oak. Extended lees contact adds depth, but the star here is that zingy natural acidity and pure citrus energy. It’s textured, mineral, and quietly complex—like the calm friend who always brings good wine and better stories.
