Bondar’s Monastrell is a limited release, with only 100 dozen produced. It comes from 15-year-old vines in the Lacey vineyard, Willunga, grown on rocky clay loam soils over the Kurrajong geology formation. The vines are minimally farmed, and the winemaking involves hand-picking, no additions, and bottling unfined and unfiltered. Some fruit is whole-bunch fermented, and the wine matures for 13 months in seasoned French hogsheads.

Andre Bondar uses the name Monastrell to emphasise a more savoury, medium-bodied style. The wine is brightly perfumed with berry fruits, exotic spices, and whole-bunch notes. The palate offers savoury, mineral layers with warmly spiced fruit, fresh structure, and vivid flavour, leaving a lasting impression and garnering a cult-like following.
