Minim Amber Pecorino Sauvignon Blanc

Sauvignon Blanc from Peerick Estate in the Pyrenees and a healthy amount of Heathcote Pecorino, grown by Chalmers, both fermented on full skins for 14 days. This skinsy is a throwback to the early days of amber wine, stone fruit, white peach and lemon curd. Plenty of finesse, crisp and absolutely smashable.
