Dalwhinnie The Eagle Shiraz 2018
Cool-climate Australian Shiraz at it's finest. Crimson in colour with a faint garnet meniscus, dark berries, red plum, forest floor and a warm, brambly spice dominate the palate. 2018 was a wonderful growing season with an excellent fruit-set and a long ripening period, developing extreme complexity in the wine. It was fermented as a single batch for 10 days using 20% whole bunch in the vessel. The wine was aged using 50% French oak Barriques, and 50% one-two year old barrels for 20 months. Only the best barrels were selected for "The Eagle" to obtain a truly wonderful reflection of this single vineyard icon. Dalwhinnie has been producing wine for over 50 years now, and at 595m above sea-level, it is the highest and remote vineyard/winery in Victoria's Pyrenees region.
