The hand-picked fruit is carefully sorted, with each bunch destemmed gently into fermenters. The fermentation process, taking place over 25 days, ensures the purity of the fruit is preserved while maintaining fine structure. After pressing, the wine is transferred to French oak barriques—30% new—where it matures for 10 months, enhancing its complexity and adding a touch of elegance.
