From a wild planted plot of Chardonnay in the Biaunes lieu-dit, the vines originally sourced from massale cuttings of Anselme Selosse’s and Vincent Dauvissat’s vines. There is only a small yield each harvest, contributing to the wine's quality and intensity.
Fermented naturally in old barrels and Georgian amphorae, followed by 15-18 months of lees aging in bottle before disgorgement with zero dosage. This is a striking wine of superb intensity, with a tightly wound body and a long, salty finish. Described as Grand Cru Chablis with bubbles, it showcases Kimmeridgian minerality, briny salinity, and vibrant fruit, promising further expression with additional cellar aging.
