Crafted from 78% Tasman Peninsula and 22% East Coast fruit, this wine undergoes whole-bunch pressing into seasoned 300L French oak barrels, where it ferments wild with some solids. After nine months of maturation, half the wine is sulphured immediately post-fermentation, while the other half is stirred without SO₂ for three months, enhancing complexity and texture.
